Cookie Ice Cream Sandwich: Homemade Chipwich

cookie ice cream sandwich: the chipwich, a tasty homemade ice cream sandwich.
The homemade chipwich is a delicious cookie ice cream sandwich.

Cold, sweet, and easy to make. What more can we ask of the Chipwich? Not much, my friends.

Wanna make one yourself? It's not hard: start putting your favorite chocolate chip cookie recipe into action (or buy pre-made cookies), and make sure you have ice cream on hand. Get a pack of mini chocolate chips if you're feeling fancy; you can roll the edge of each Chipwich in 'em before serving.

Tips for Uniform Cookies

Uniform cookies are important for your homemade ice cream sandwich to work well; you want the top of each chipwich to pair up nicely with the bottom half.  If you've had trouble making uniform cookies in the past, try using a melon-baller, spoon, or other implement to help you get roughly the same amount of dough for each cookie. Roll each lump of dough of into a small ball with the palms of your hands before placing them on the cookie sheet and proceeding according to your recipe. These steps should help you make cookies with circular borders and roughly the same circumference.

But if uniformity isn't your goal, don't worry about it. It's not about how these cookie ice cream sandwiches look, it's about how they taste: delicious.

Tips for Uniform Ice Cream Rounds

If you want to get fussy and make round ice cream disks for your chipwich, then heed this advice: Unwrap a box of ice cream and cut it into slices 1.5 to 2 inches thick. Using a circular cookie cutter, biscuit cutter, or the end of a drinking glass about the size of your cookies (have a few sizes on hand, so you can match your cookie sizes), cut rounds out of these slices. Work quickly! You can place the rounds back in the freezer, separated by sheets of wax paper until ready to insert them into your cookie ice cream sandwiches.

If you just want to eat the frickin' chipwich, then wait no longer; put a scoopful of ice cream between two cookies, and take a bite!

Happy New Year!
